Olive Oil Chocolate Cookies
These cookies are so easy to make and so yummy. I usually make them When I have one or two bananas left that are too ripe for me to eat and I transform them into these chewy chocolate cookies with just a hint of banana taste.
Yummy Olive Oil Chocolate Cookies
Ingredients:
1 - 2 ripe bananas
1/2 cups all purpose flour (or a combination of oat flour and all purpose flour)
4 tablespoons of agave or 6 of brown sugar
7 tablespoons of olive oil
1 tablespoon of unsweetened degreased chocolate powder.
1 teaspoon vanilla extract
A pinch of salt
Preheat oven to 350 F
In a medium bowl smash the bananas until a purée is formed.
Add sugar or agave, olive oil and mix well, Add chocolate powder until well integrated. then gradually add the flour with salt and the vanilla extract.
scoop them on a baking sheet lined with parchment paper. Using a spoon will help. It will give you about 6 cookies,
Bake at 350 F for about 20 minutes. The cookies will feel a bit soft but they will become more firm as they cool. Let cool on a cooling rack for about 10 minutes and enjoy.
