What’s for dinner? (Monday)

For years, I have struggled to create meals that are both delicious and healthy, yet balanced enough for my family, which is not completely vegetarian but tends to lean that way during the week. Gradually, I have developed a pretty good and delicious array of recipes that form a full dinner menu for each day of the week (Monday to Friday). This is my first menu (Monday), and I hope it is useful to those running out of ideas for what to cook.
